  1. Combine the washed quinoa, almond milk, cinnamon sticks, vanilla, and salt in a small saucepan.
  2. Bring to a high simmer, then cover the pan. Reduce the heat to bring to a low simmer for 15 minutes. If it starts bubbling, turn the heat off and stir midway through, then resume cooking.
  3. Remove the pan from the heat and let it sit for 5 more minutes. Make sure the almond milk is absorbed by the quinoa. Taste and add a few spices to your liking.

  1. While waiting for the quinoa to cook, add 1 tablespoon of olive oil to a pan. Saute the onions and bell pepper in medium-low heat for 4 minutes. Add the oregano, parsley, and garlic for another minute.
  2. Remove the quinoa from heat and let it sit for 10 minutes. Take a paper towel and press down on the quinoa to remove excess moisture.
  3. Combine the sauteed vegetables along with the remaining ingredients in a mixing bowl, except for oil. You can use a fork to mash the ingredients together. Make sure the lentils are well mashed. Using your hands, form 1 ½ inches of meatballs and place them into a bowl. Cover and refrigerate for about 2 hours.
  4. Add the 2 tablespoons of olive oil into a non-stick skillet and fry the meatballs in medium-low heat. Turn over until all sides are browned. Remove from the skillet and drain excess oil with paper towels. 


  • If you want to serve it with pasta, you may coat it with marinara sauce. Just add the marinara sauce to the skillet and gently turn to coat the meatballs. Let it simmer until hot and serve.
